Shoestring Issue #4

Today is a very special day.

Prince William has just married Kate Middleton in Westminster Abbey. The Royal Wedding has been a massive cause for celebration in Britain and I am chipping in with the latest issue of Shoestring as a wedding gift.

But Shoestring itself has a reason to celebrate today as well! Today one year ago, the very first issue of Shoestring was published. One year of support from contributors and readers alike means that I am now able to give you the fourth issue of Shoestring, on its first anniversary!

Have your say!

Shoestring is a travel magazine from backpackers for backpackers and those taking Gap Years and Sabbaticals. And as such, you, the readers and contributors, should have say in what you want to write about. After all, this magazine is meant to inspire as well as share advice and experiences.

With the third issue out in late January, it is time for a bit of feedback.

Delicious Raw Food recipes

Chocolate brownies:

Mix together either in a food processor or by hand:
1 ½ cups unsulferized, raw dates
½ cup raw cacao powder
½ cup mixed nuts
1 tsp each cinnamon and cardamom (optional)
2 tbsp raw coconut oil/butter or raw dehydrated grated coconut (optional)
2 tbsp of any : pumpkin, sunflower, chia, sesame seeds (optional)
2 tbsp goji berries (optional)

Dip hands into cacao powder to avoid sticking, and roll into balls or push into a pan or plate and cut into slices. You can refrigerate or leave at room temperature in an air tight container for up to a week, if they last that long.


Easy to make wraps:

Mix together an avocado, ¼ pineapple (optional) diced, grated carrot, beet, small zucchini, a diced tomato and cucumber together in a bowl. Add ½ fresh lemon juice, 2 tbsp olive oil, salt, pepper, and any spices and herbs that you’d like for extra flavor (basil, oregano, cumin, cayenne pepper). Mix together and place in a lettuce or cabbage leaf. Enjoy!


Trail Mix:

Mix any or all of the following: nuts, seeds (pumpkin, sunflower), dehydrated berries+ fruits, oatmeal, raisins, cranberries, dates, figs.


Crunch mix:

Sprinkle sprouted lentils, chickpeas, mung beans, quinoa and/or buckwheat with a mix of herbs and spices: oregano, basil, cayenne pepper, organic sea salt, black pepper, cloves, cinnamon, cumin, and/or any of your favorite natural spices, and a little bit of olive or coconut oil/butter.


Almond Milk:

Soak 1 cup of almonds overnight in water. Rinse, drain and blend with 5 cups of water in the morning. Strain in your milk bag into a large bowl. Pour into a bottle and add your natural sweetener, cinnamon, vanilla, and/or cardamom. Shake well before each use. Eat with raw oatmeal or just as it is for a light, delicious, nutritious beverage. You can also freeze into popsicles whenever a freezer is available.
Use the almond pulp leftover in a salad, in your trail mix (let dry first either at room temperature or by the sun), or in the chocolate balls. You can also use it in baking and sauces if you choose to do so.


For teas:

Add any of the following to hot water, but never add them while water is boiling: ginger, honey, lemon, anise seed, cumin seed, clove, cardamom seed, basil, mint, fresh flowers (chamomile, rose), lemon grass, dehydrated orange/lemon/grapefruit peel, tree bark, or just have hot water with fresh fruit.
